Best ever Lamb and halloumi burgers!




The sun is shining and even though nobody is allowed out their houses we cant deny its perfect BBQ weather.

So if you're lighting up the coals this Easter weekend, why not give these beauties a try!

Best ever Lamb and halloumi burgers!

Mediterranean flavours of mint, cumin and garlic mean these Cypriot inspired beautiful will have you feeling like its holiday season!



Recipe

makes 4 good sized burgers

Ingredients


Burgers

400g minced lamb

1 small onion

Handfull fresh mint leaves

2 cloves garlic

1 teaspoon smoked paprika

1.5 teaspoon oregano

1.5 teaspoon dried mint

1/2 teaspoon cumin

Juice 1/2 lemon

2 teaspoon olive oil


Toppings

1 block halloumi cheese

170g Greek yoghurt (or 1 small tub)

teaspoon dried mint

2 tablespoon grated cucumber - water squeezed out

1 large tomatoes sliced

1 – Using a processor chop the onion and garlic super fine, if you dont have one then grate them into the minced lamb.

2 - Add the herbs and spices along with the lemon juice and olive oil and season generously

3 – Using your hands mix up the mixture so everything is very well incorporated.

4 – The burgers can be put on the BBQ, grilled or griddled in a pan.


Now - for the toppings!


5 - Mix the Greek yoghurt with the dried mint, and cucumber

6 – Slice the halloumi into even sized slices and grill or fry them - make sure you do this last!

7 - enjoy the burgers in burger buns or on flat-breads with a dollop of the Tzatziki yogurt mix, the grilled halloumi, and some fresh salad.


Variations

Feta - Feta cheese works great instead of halloumi too, just crumble it right into of the burger and you're good to go!

Lets be honest - these are going to taste delicious whatever toppings you choose!
