Keftethes, the meatballs no Cypriot can resist!

These meatballs are a firm family favourite! Lots of flavour and the perfect size to filch when they're hot out the pan. Delicious as a snack, as a main meal served with chips or some rice, and some Greek yogurt, nice with some salad in a pitta and kids love them. I often take them to parties and they're always the first thing to go. **Make more than you need, you will eat at least 10 as you're cooking them** ***This recipe is A LOT easier if you have a chopper or food processor*** Recipe Prep Time : 45 minuets (Plus half hour standing time of the mixture) Serves : This mixture makes approx 35 keftethes Difficulty : Moderate 500gr Minced pork 1 Small onion 1 Small potato Large bunch of parsley 1 Egg 1 Lemon 1 Slice of bread 2 Tablespoons mint 2 Teaspoons cinnamon 1.5 Teaspoons salt 1.5 Teaspoons pepper Sunflower oil for frying 1 - In a large bowl put your minced pork. 2 - Finely chop the onion and parsley in a processor and then make breadcrumbs with the bread, crusts and all, and add to the bowl. 3 - Grate the potato on a fine setting, once grated, squeeze out the water from them and add to the bowl. 4 - Crack the egg into the mixture and add the salt, pepper, mint and cinnamon, along with the juice of the lemon. 5 - Now get your hands dirty. Using your hands mix everything in well, making sure all the ingredients are well incorporated. 6 - Leave the mixture to stand for about half an hour so the flavours can all mix. **This can be left in the fridge covered overnight if you want to get ahead** 7 - Put the oil in a deep pan and start to heat it up. 8 - Roll the mixture into little meatballs, you don't want them too big or they won't cook in the middle in time, so take a small amount of mixture, about half the size of your palm, and roll it into a ball. This is easiest if your hands are slightly wet as it will stop the meat sticking. 9 - Once the oil is hot (you will be able to tell by putting a tiny pinch of mixture into the pan, if it immediately starts to bubble then your oil is hot) fry your meatballs in batches until they're brown, approx 5-7 mins. 10 - Once cooked drain them on some kitchen paper and they're ready to go! 11 - Not strictly a step but.... try not to burn your mouth on them as you're sneaking them out of the pan ;) **ENJOY**
