Iced gingerbread biscuits.
The festive baking shows no sign of slowing down over here! Gingerbread biscuits are so much fun to make and decorate, they can be made into any shape you fancy, with any decoration you fancy. Kids absolutely love making them with you, and the best part? Well, eating them of course!! Recipe Prep Time : 30 Mins Serves : Makes about 35 of various sizes Difficulty : Easy For the biscutes 125g soft unsalted butter or Stork baking block 90g soft brown Sugar 1 egg yolk 415g plain flour 1/2 teaspoon bicarbonate of soda 3 teaspoon ground ginger 1/2 teaspoon mixed spice 175ml golden syrup For the icing 1 egg white 240g icing sugar 1 teaspoon water 1 - Cream the butter and sugar together well. It's best to use an electric mixer for this, but if you don't have one just keep going till it's a very smooth paste. Then mix in the egg yolk and golden syrup. 2 - Sift the flour and bicarbonate of soda together along with the ginger and mixed spice. 3 - Add the dry ingredients to the butter and sugar mixture and mix first with a spoon then when it becomes too tough, use your hands till it's all comes together. 4 - Once it's all come together, move onto a floured surface and continue to knead for a minute or 2 till it's smooth. Make a ball and cover with cling film, leave to chill for an hour in the fridge. 5 - Preheat the oven to 170*C. 6 - Roll out so it's about 3mm thick and cut out shapes using your chosen cutters. Keep reusing the scraps until all the mixture is gone. Place them on a lined baking tray and bake for about 10 - 12 minutes. 7 - Once out the oven leave them for a few minutes to harden up, then move onto a cooling rack and leave to cool completely. 8 - For the icing mix together the egg white and icing sugar, if you think it needs to be loosened up a little then add some of the water. You're looking for a thick white icing that will hold its shape as you ice the biscuits. You can ice them with a piping bag if you feel confident (or are feeling brave and want to give it a go!) or you can simply dip or drizzle on, either way they will taste utterly delicious!! 9 - Enjoy!
